  1. Heat oil in a medium pan. Fry the onion and garlic for a few minutes, until golden
  2. Add the peppers, green chilli, asparagus, tomatoes and spices. Cook for 3-4 minutes on medium heat
  3. Add stock and quinoa, and bring to boil on high. Cook for 10 minutes or until the quinoa is cooked through. If soaking the quinoa, it will cook much faster
  4. Add lemon juice and serve
