The ingredients

Step 2: Muddle Mint and Lime

Drop 6 small ice cubes into the glass and divide the coconut water and pineapple juice evenly between the two glasses. Garnish with a pineapple wedge on the rim of the glass for a finishing touch, and serve immediately.

  • ¼ lime, cut into two segments
  • 6 mint leaves, large, fresh
  • 6 ice cubes, small
  • ½ cup coconut water
  • 1 cup pineapple juice, no added sugar, pure nectar
  • honey, for glass rim
  • desiccated coconut, unsweetened, dry toasted for glass rim, about a tbsp
  • pineapple, two small chunks for glass rim

Instructions
 

  • On low heat, toast desiccated coconut in a dry pan until lightly golden.
  • Spread honey on a plate – about the same diameter as your glass. Turn your glass upside down and rotate the rim in the honey.
