Ingredients
- ¼ lime, cut into two segments
- 6 mint leaves, large, fresh
- 6 ice cubes, small
- ½ cup coconut water
- 1 cup pineapple juice, no added sugar, pure nectar
- honey, for glass rim
- desiccated coconut, unsweetened, dry toasted for glass rim, about a tbsp
- pineapple, two small chunks for glass rim
Equipment
- 1 muddler
Instructions
- On low heat, toast desiccated coconut in a dry pan until lightly golden.
- Spread honey on a plate – about the same diameter as your glass. Turn your glass upside down and rotate the rim in the honey. Then spread the toasted coconut on a plate and rotate the rim in the coconut to coat evenly. The honey helps the coconut stick to the rim. Repeat the process with the second glass.
- Add one lime quarter and three mint leaves to each glass. Muddle leaves and lime segments. Take your time to ensure you release all the juice and flavour.
- Drop 6 small ice cubes into each glass and divide the coconut water and pineapple juice evenly between the two glasses.
- Place a pineapple wedge on the rim of the glass for a finishing touch, and serve immediately.
