I love to make easy and healthy dessert recipes our family and guests will enjoy. Plus, the nicest thing about this coconut strawberry mousse is that you can make it ahead of time. That way, there’s no fuss and stress on the day of your dinner party. 

You can serve it after an hour of refrigeration, but I prefer the consistency way better after at least three hours.

This mousse is whisked to perfection! Blissfully delicate and fluffy on the inside and perfectly elegant on the outside – this extra-special, easy and healthy coconut strawberry mousse will desi-liciously complete an intimate dinner party spread or be one of the most appetizing stars of your Thanksgiving or Christmas menu! 

How To Make This Easy And Healthy Coconut Strawberry Mousse – Step By Step

  1. Start by defrosting the frozen strawberries in the microwave (Image 1). 
  2. Then whisk the aquafaba (liquid leftover from cooked chickpeas) in an electric mixer. For ease, I obtain the aquafaba from a can of unsalted chickpeas (Image 2)
  3. Whisk the aquafaba for 5-6 minutes to achieve a medium-stiff peak (Image 3). Transfer to a large mixing bowl and set aside. 
  4. Wipe your mixer clean and whisk the coconut cream for 3-4 minutes (Image 4). 
  5. Add this to the whipped aquafaba, but don’t mix (Image 5). 
  6. Next, puree the strawberries with maple syrup in a blender (Image 6).
  7. Fold the strawberry puree into the whipped aquafaba and coconut cream (Images 7-8). Be gentle and take your time to ensure everything is combined well. This gentle folding is what will give your strawberry mousse that delicate and fluffy consistency.
  8. Transfer into small or medium bowls and refrigerate for at least one hour – ideally three hours.

How Do You Defrost Frozen Strawberries Quickly?

The easiest and quickest way to defrost frozen strawberries is to use your microwave. Simply place the frozen strawberries in a microwave-safe bowl and use the appropriate defrost setting on your microwave.

Besides being bright, juicy and delicious, strawberries are also a healthy fruit. I find that choosing frozen is a convenient way to enjoy one of my favourite fruits – all year long. I’ve been having fun this month, creating some of my favourite easy and healthy dishes, using frozen strawberries. I’ve thrown them into smoothies, lassi, salad dressings and cupcakes.

Let’s take a look at the benefits of eating strawberries.

Strawberries are:

  • Rich in vitamin C – which helps to support a robust immune system and promotes healthy skin. In fact, one cup of strawberries has more vitamin C than an orange. Just one serving of eight medium strawberries provides 110 percent of your recommended Daily Value
  • Low in carbs – making them a smart choice for those with diabetes
  • Bursting with antioxidants and plant compounds – to help improve heart health and reduce inflammation
  • Low in calories – a mere 35 calories per 100 g portion!
  • Full of water – to keep your hydration in check
  • A good source of fibre – one serving (eight medium strawberries) provides three grams of fibre. 
  • Naturally sweet – to help you reduce your intake of added sugar

Do Strawberries Lose Nutrients When Frozen?

Did you know strawberries are harvested at their peak of freshness in California, hand-picked from the fields and immediately frozen– capturing all of their nutritious benefits. You may be surprised to hear there is no significant difference in vitamins, minerals, fibre, or antioxidants between fresh and frozen strawberries.

Top Desi-licious Tips For Making Coconut Strawberry Mousse

  • Don’t overdo it in the microwave. The thawed strawberries should look bright—otherwise, they will lose their shape and become too wet. If the strawberries are too frozen, you can microwave for another 10-15 seconds
  • Choose thick coconut cream – not coconut milk; or else, your coconut strawberry mousse will be too runny and not have the right consistency
  • Use an electric mixer to whip the aquafaba and coconut. Doing this by hand will take too long
  • Be patient when you whisk the aquafaba. You want to achieve a stiff peak for that perfect strawberry mousse softness
  • For best results, I’d recommend refrigerating the mousse for at least 3 hours and enjoying the same day
  • Just before serving, garnish with strawberries, a sprig of mint and coconut shavings

  • 1 cup strawberries , frozen, heaping cup, defrosted
  • 1/2 cup aquafaba
  • 1 cup coconut cream, thick, use the cream part and not the water
  • 2 tbsp maple syrup

  • Electric hand mixer or stand mixer
