Step 1

Begin by preparing quinoa for cooking: rinse it several times with water. Then drain any excess water and set it aside.

Step 2

Next, heat a pot on medium heat, add oil and fry the garlic. Once the garlic turns golden and releases its aroma, add the stock and bring it to a boil.

Step 3

Then, add the quinoa and bring it to a boil. Cover and cook the quinoa on high heat for 8 minutes. Then, reduce the heat to low and continue to cook for 2 additional minutes.

Step 4

At this point, you want to switch off the heat and let the quinoa sit (covered!) for 5 minutes. Then, Garnish the quinoa with lime juice and cilantro.

Step 5

Finish by using a fork to separate the quinoa seeds and mix gently. Serve warm.
