Ingredients
Turn the Instant Pot to "sauté" mode, and add oil. Then, sauté the garlic and diced onion until lightly golden, about 2-3 minutes
Add vegetables, stock and seasoning. Set the Instant Pot to "soup" mode for 2 minutes. Once done, let the pressure release naturally for 5 minutes.
When the Instant Pot is done, and it's safe to open, transfer everything to a blender. Add cashews, nutritional yeast, and dill and blend until creamy,
Serve warm with sunflower seeds, croutons and a sprinkle of fresh dill on top. It never disappoints!
