These easy no-bake protein peanut butter bars are made without protein powder and use hemp and rolled oats to create a healthy snack or dessert!
Combine the dry ingredients: rolled oats, unsweetened desiccated coconut, hemp seeds, and cinnamon powder in a medium bowl.
Next, in a smaller bowl, mix together the crunchy peanut butter, maple syrup, and vanilla extract until well combined.
Then, pour the wet ingredients into the dry ingredients and stir well. Take your time!
Line a 6X4 inch dish with parchment paper. No oil is necessary. Then, spoon in your oat-peanut butter mixture.
Using the back of a medium spoon, firmly press down on the oats mixture to flatten it. It should be nice and even.
Top with peanuts and use the same spoon to press down firmly to ensure they stick. Place in the freezer for at least 1 hour to allow it to set fully.
When you're ready to enjoy, remove from the pan and cut into bars using a sharp knife!
