Ingredients

  • 2 tbsp olive oil, extra virgin
  • 1 tsp cumin seeds
  • 1 onion, white, medium, finely chopped
  • 2 cloves garlic, fresh, minced
  • 1 bell pepper, red, diced into small pieces
  • 2 tomatoes, medium, cut into small cubes
  • 2 tsp paprika, smoked
  • tsp curry powder
  • 1 tsp coriander powder
  • 1 tsp red chilli, powder
  • 1 ¼ tsp sea salt
  • ½ tsp black pepper
  • 2 cup spinach, chopped. You could use bok choy or other greens
  • 10 eggs, large
  • ½ cup cilantro, fresh, washed, finely chopped

Instructions

  • Heat oil in a large pan, add cumin seeds, and fry until lightly browned and aromatic.
  • Stir in garlic, onion, and bell pepper, cooking on medium-high heat for 5 minutes.
  • Add tomatoes and cook on high heat for 5 minutes or until the tomatoes are mushy. Stir regularly to prevent sticking.
  • Incorporate spices and salt; reduce heat to low and mix well.
  • Add spinach and cook for 1 minute.
  • Crack eggs into a separate bowl and pour them into the pan, stirring constantly until fully cooked. Garnish with fresh cilantro and enjoy!

Notes

Food safe storage

  • For safe storage, any leftover bhurji should be transferred to an airtight container once it has cooled to room temperature. This will help maintain its freshness and flavour.
  • Store the container in the refrigerator, where it can stay for up to 3-4 days.
  • When reheating, make sure to use a microwave-safe dish or gently warm it on the stovetop.
