Ingredients
Dry roast the whole spices in a pan or on a tava (Indian girdle) for 2-3 minutes, stirring continuously.
When the spices are lightly browned and begin releasing their fragrance, they are ready. Transfer to a bowl and cool completely.
Using a spice or coffee grinder, grind the spices. You should end up with a fine powder. Store in an airtight container to preserve its flavour and aroma.
