Ingredients
 

  • ½ cup espresso, or strongly brewed coffee
  • 1 cup soy milk, or other plant based milk
  • 2 tbsp pumpkin puree, canned
  • 2 Medjool dates, customize to your taste buds
  • ¼ tsp pumpkin pie spice, + extra for sprinkling on top
  • tsp sea salt
  • 2 cubes ice
  • 2 tbsp coconut cream, optional

Instructions
 

  • Place a can of thick coconut milk or cream in the freezer overnight. The next day, extract the cream from the top.
  • In a blender, combine espresso, soy milk, pumpkin puree, Medjool dates, pumpkin pie spice, vanilla extract, and sea salt. Blend until creamy and frothy.
  • Fill two glasses with ice cubes and pour the blended latte into the glasses.
  • Top with coconut cream for an elegant touch, or simply spoon it on. Sprinkle with a pinch of pumpkin pie spice.

Secret to decadence: Coconut cream topping

  • And here's a fun twist: we crown this latte with a billowy cloud of coconut cream. To achieve this ethereal topping, simply plan ahead by chilling a can of thick coconut milk or cream in your fridge overnight. This results in a velvety, creamy layer that elevates this latte from delightful to downright decadent.
  • Now, the choice is yours: you can artfully pipe the coconut cream onto your latte for an elegant presentation, or if you're pressed for time (or simply prefer the unadulterated simplicity), a generous dollop of coconut cream gently spooned atop your latte will work its magic beautifully.

Substitution do

  • Do feel free to swap soy milk with your preferred plant-based milk, like almond, oat, or cashew milk, based on your taste and dietary preferences. These alternatives will work well and allow you to customize the latte to your liking while maintaining its vegan nature.
