Rajma (Kidney Bean Curry) with Air Fryer Zucchini

Ingredients
 

Air fryer zucchini

  • 3 zucchini, medium, washed, cut into 1/4 inch rounds
  • ½ tbsp olive oil, extra virgin
  • 1 tsp chilli flakes
  • 1 tsp cumin powder
  • 1 tsp smoked paprika

Rajma curry

  • cups tomato sauce, homemade is best
  • 1 tbsp curry powder
  • 1 tsp garam masala
  • 1 tsp chilli powder
  • 2 cups kidney beans, cooked (canned), drained and rinsed,
  • ½ tsp salt, sea salt
  • ¼ cup cilantro, fresh, washed, finely chopped

  • 1 air fryer

Instructions
 

Air fryer zucchini

  • Preheat the air fryer to 400°F (200°C) for an even, crispy result.
  • Drizzle olive oil to coat the zucchini rounds and season with paprika, cumin, and chilli flakes.
  • Arrange zucchini in the air fryer and cook for 15 minutes; flip and air fry for another 5 minutes.

Rajma curry

  • Heat homemade tomato sauce in a pan over medium heat.
  • Add curry powder, garam masala, and chilli powder and stir.
  • Fold in cooked kidney beans, coating them in the sauce and simmer on low heat for a few minutes.
  • Finish by adding salt, cilantro and air-fried zucchini. Stir gently and serve with hot roti.

Notes

Food safe storage

  • This Rajma Curry should be stored in an airtight container in the refrigerator for up to three days. If you plan to freeze it, keep it in a freezer-safe container for up to a month.

Troubleshooting tip

  • My Rajma Curry turned out too thin. What can I do? If your curry is thinner than you'd like, try mashing a few kidney beans with the back of a spoon to thicken the sauce. You can also add a tablespoon of tomato paste to enhance the consistency.
