How to make it

Air fryer zucchini in 3 steps

You want to begin by preheating your air fryer to 400°F (200°C). Preheating is key to ensure even cooking.

While the air fryer is preheating, I make the most of my time in the kitchen by washing and slicing the zucchini. It’s best to cut them into rounds that are approximately 1/4-inch thick. In my experience, this thickness works best for achieving a perfect charred exterior and tender interior.

Step 1: Drizzle olive oil and spices over the zucchini slices. Using your hands, toss the slices gently to ensure they are well coated with the oil-spice mixture.
Air fryer baskets filled with zucchini rounds coated in spices.
Step 2: Place the seasoned zucchini rounds in the air fryer baskets – ideally in a single layer. Crowding the basket may result in uneven cooking, so it’s best to cook the zucchini in batches if needed.

Step 3: Air fry the zucchini for 10 minutes, flipping the slices. Then, air fry for another 5 minutes to ensure both sides get the perfect char.

What is rajma curry?

Rajma curry, also known as Kidney Bean Curry, is a popular and flavorful Indian dish made with kidney beans (rajma) cooked in a rich and aromatic tomato-based gravy. It is a beloved vegetarian and vegan option, cherished for its comforting taste and hearty texture.

I don’t have an air fryer. Can I still make the zucchini?

Of course! If you don’t have an air fryer, you can roast the zucchini in the oven at 400°F (200°C) for about 15-20 minutes or until they are nicely charred.

Troubleshooting cooking tip

My rajma curry turned out too thin. What can I do?

If your curry is thinner than you’d like, try mashing a few kidney beans with the back of a spoon to thicken the sauce. You can also add a tablespoon of tomato paste to enhance the consistency.
